Wrap it Up!

I found this gem. Hope y'all enjoy it!

Chicken & Fire-roasted Corn Lettuce Snack Wraps

2 boneless, skinless chicken breasts
1/4 tsp ground cumin
Juice of 1 lemon
Juice of 2 limes
2 ears of corn (yellow or white)
2 plum tomatoes
1 sweet yellow onion sliced into 1/2" rings
1 jalapeno pepper
1 peach, diced
1 avocado, cubed
1/2 cup fresh cilantro
Sea salt and pepper, to taste
1 head of Bibb lettuce, leaves separated into lettuce wraps

4 Easy Steps:

1- Place chicken in mixing bowl. Add cumin, juice from the lemon and half of the lime juice. Mix to coat and let marinate for 15 minutes.
2- Heat an indoor or outdoor grill. Coat grates with canola oil. Grill chicken, corn, tomatoes, onion slices and jalapeno for about 15-20 minutes.
3- Remove food from grill. Cut corn off the cob; chop vegetable and chicken into cubes. (You can remove seeds from jalapeno's so it's not so hot"
4- In a large bow, toss chicken with vegetable, peach, avocado, cilantro and remaining lime juice, to coat. season to taste. Serve in lettuce cups.
